Wildman Wine, Piggy Pop Pét Nat

£27.00

Tasting Note

Tangerine pink, somewhere between a dry rosé and a chillable red. Peach, apricot and red cherry, then blood orange, pomegranate and a hint of raspberry and salted liquorice. Soft bubbles and a mouthwatering tang. Serve cold, unshaken.

Drink it with: pizza, a barbecue, or a sunset.

The Winemaking

The red grapes are co-fermented with some whole bunches and pressed early for a light colour and gentle tannin. Bottled with a little sugar left, it finishes fermenting in bottle over winter, ending dry with around 3 bar of soft fizz.

The Vineyards

Cool South Australian vintages that let the fruit ripen slowly, keeping freshness and acidity alongside good flavour.

The Producer

Wildman Wine is the pét-nat project of Tim Wildman MW: fun, fresh, properly made Australian sparkling wine. Since the first vintage in 2014 the fruit has moved to cooler, better sites in the Adelaide Hills and McLaren Vale, with Nero d'Avola, Zibibbo and other Italian grapes at its heart.
