Tasting Note
Pale yellow with bright green glints. Fresh and fruity, with lemon and grapefruit, then a lively, exotic palate with a rich core of citrus and a long finish.
Drink it with: oysters and seafood platters.
The Winemaking
Destemmed and cold-soaked for two hours, then pneumatically pressed. The juice is chilled to 4°C and rests on its lees for 10 days before a cool fermentation; it then ages on fine lees with regular stirring for richness. No oak.
The Vineyards
Some of the oldest vineyards on the Mediterranean coast, on high clay-limestone ground cooled by sea breezes. Picked at night; HVE level 3 certified.
The Producer
Vignerons de Florensac specialise in fresh Mediterranean whites from vineyards near the Étang de Thau, with an eco-minded approach in both vineyard and cellar.
