Tenuta Olim Bauda, Gavi DOCG

£21.00

Tasting Note

Simple, elegant Gavi. Floral aromas and soft citrus fruit, then a fresh, dry palate with crisp floral notes, a hint of minerality and a pure, clean finish.

Drink it with: light cheeses, white fish, chicken, or an asparagus risotto.

The Winemaking

Destemmed and pressed with a brief cold soak on the skins, then fermented slowly at 15–16°C for about 15 days to keep the delicate aromatics. Rests in stainless steel until the February after harvest.

The Vineyards

Farmed organically since 2018 (certified from 2022), with no herbicides. Strict green harvesting and bunch selection mean only fully ripe fruit makes it to the winery.

The Producer

Olim Bauda is a quiet family estate in Piedmont run by siblings Dino, Diana and Gianni. Fresh Barbera d'Asti and pure, delicate Gavi are their speciality, made with a light touch in the cellar.

The Details

  • Vintage: 2025
  • ABV: 12%
  • Size: 75cl
  • Region: Gavi, Piedmont
