Tasting Note
Delicate rose-pink, with ripe raspberry and red cherry, biscuity richness and a hint of toasted almond. Long and beautifully balanced.
Drink it with: roast duck breast, smoked salmon with dill crème fraîche, or on its own.
The Winemaking
Whole-bunch pressed, with a little fermented in old Burgundy barrels, then at least 36 months on the lees in bottle. A splash of still red Pinot Précoce added at disgorgement gives the colour and red-berry lift.
The Vineyards
The estate's own West Sussex vineyards, mainly on loam and clay, hand-picked into small buckets.
The Producer
Roebuck Estates was founded in 2013 near Petworth in West Sussex by Mike Smith and John Ball, who spent years choosing their sites. They make sparkling wine only from the classic Champagne grapes, and only from their own estate-grown fruit.
