Tasting Note
Elegant English fizz with baked apple, ripe apricot, biscuit and toasted almond. Fine bubbles, lively acidity and a long, balanced finish.
Drink it with: oysters, mussels, or scallops in lemon butter.
The Winemaking
Hand-harvested, with part of the blend (about 15%) fermented and aged for eight months in old Burgundy barrels. At least four years in bottle on the lees before release.
The Vineyards
Several of the estate's Sussex vineyards on chalk, clay and sand, hand-picked into small buckets.
The Producer
Roebuck Estates was founded in 2013 near Petworth in West Sussex by Mike Smith and John Ball, who spent years choosing their sites. They make sparkling wine only from the classic Champagne grapes, and only from their own estate-grown fruit.
