Tasting Note
Southern French Pinot Noir with a Burgundian accent. Cherry red, with dark cherry and blackberry on the nose, then a round, rich palate of raspberry and darker summer berries. A little oak adds structure and a spicy note to the long finish. Lovely served very slightly chilled.
Drink it with: duck, pigeon, game birds or venison.
The Winemaking
Made with Burgundian methods: gentle punch-downs and a cool vatting at 24°C. Matured in stainless steel on fine lees, with a small portion aged for three months in French oak.
The Vineyards
Cooler, higher vineyards in the Haute Vallée de l'Aude, on limestone-rich soils. A long, slow ripening season builds aromatic complexity while keeping freshness and balance.

Montsablé is part of Terres Fidèles, a small-batch project across south-west France led by Fergal Tynan MW, working with growers who respect their land.
