Tasting Note
Cool-climate Chardonnay from the hills above Limoux, with a Burgundian feel at a southern French price. Pale gold, with floral notes, apricot and peach, finishing on a fresh citrus note. A light, well-integrated touch of oak adds roundness without taking over.
Drink it with: just about any fish or white meat.
The Winemaking
Cold skin contact before pressing, with the free-run juice kept apart. Fermented at 17–18°C and kept on its lees for texture. 20% spends three months in French oak.
The Vineyards
Cooler, higher vineyards in the Haute Vallée de l'Aude, on limestone soils. Altitude and a temperate climate give slow, even ripening, keeping freshness while building aroma.
The Producer
Montsablé is part of Terres Fidèles, a small-batch project across south-west France led by Fergal Tynan MW, working with growers who respect their land.
