Tasting Note
Bright, elegant summer rosé that tastes far pricier than it is. Subtle strawberry and wild raspberry, crisp and refreshing, with lively, mouth-watering acidity and a light, graceful finish. Pale, dry and made for sunshine.
Drink it with: salads, chargrilled meats, and pretty much any seafood.
The Winemaking
100% Cinsault from the coolest sites, picked in the early morning and pressed straight away to keep the colour pale. Cold-settled, fermented cool for about two weeks, then kept on fine lees in stainless steel until bottling for freshness. No oak.
The Vineyards
Parcels around Puichéric in the Languedoc, with vines around 25 years old at about 150 metres, in a sunny, wind-sheltered spot that allows slow, even ripening.
The Producer
Part of Terres Fidèles, a small-batch, old-vine project across south-west France led by Fergal Tynan MW, working with independent growers who look after their land.
