Tasting Note
Viognier from Chile's cool south, which means all the perfume without the heaviness. Pale yellow, with clean, elegant citrus and floral aromas. The palate is fresh and well balanced, with good body and a dense, satisfying finish. A really smart alternative to Chardonnay.
Drink it with: grilled fish, pasta with a lightly spiced sauce, chicken or a summery salad.
The Winemaking
The grapes are crushed with minimal oxygen exposure and only the free-run juice is used. After settling, it's fermented cool (13–15°C) in stainless steel. No oak.
The Vineyards
Bío Bío, around 500 km south of Santiago: a cool, windy region with heavy winter rain and varied soils, from clay and sand to stony ground and volcanic ash.
The Producer
Viña Indómita is based in Casablanca, with vineyards from Casablanca to Maipo, Maule and Itata. Each grape goes where it grows best, and sustainability runs through the business, from water and energy use to local jobs.
