Tasting Note
Proper Maipo Cabernet: generous, smooth and built for the dinner table. Deep garnet, with ripe and stewed red fruits, warm spice and a curl of smoke on the nose. The tannins are firm but lively, the palate balanced and smooth, and the oak shows itself on a long, satisfying finish. A lot of wine for the money.
Drink it with: anything off the grill, a rich stew or a mushroom risotto. It's surprisingly good with Asian dishes too.
The Winemaking
Traditional fermentation at 28–29°C with regular pump-overs, then 4–7 days on the skins afterwards for extra depth. Around 70% of the wine spends 12 months in barrel (mostly French, 25% new), the rest stays in tank to keep the fruit lively.
The Vineyards
Maipo is Chile's Cabernet heartland, running from the edge of Santiago up to the Andes foothills and out towards the coast. Warm days, cool nights and deep alluvial soils give ripe fruit with real structure.
The Producer
Viña Indómita is based in Casablanca, with vineyards across Chile from Casablanca to Maipo, Maule and Itata. Each grape goes where it grows best: cool-climate whites near the coast and in the south, big reds in Maipo. Sustainability runs through the business, from water and energy use to local employment.
