Tasting Note
Schist-grown Syrah-led red from one of the Languedoc's most characterful appellations. Complex and elegant on the nose, with black fruit and a subtle touch of oak. Soft tannins and a bright, fruit-packed finish. Generous, ripe and very good value.
Drink it with: steak, roast lamb, game, or a rich winter stew.
The Winemaking
63% Syrah, 27% Carignan, plus Grenache and a little Mourvèdre. Traditional red fermentation in concrete, malolactic, then 6–8 months in old oak barrels.
The Vineyards
South-facing slopes at around 300 metres in the foothills of the Cévennes, on pure schist. Plenty of sunshine and cool summer nights, with sustainable and, where possible, organic farming.
The Producer
Mas Olivier comes from the Faugères growers' co-operative, founded in 1959, which now makes more than half of the appellation's bottled wine and focuses on ripe, characterful, great-value wines.
