Tasting Note
Everything you want from Meursault, from a grower who really knows his patch. Ripe pear, white peach and citrus blossom, with hazelnut, toasted brioche and a flinty edge. The palate is creamy and refined, kept lively by bright acidity, and finishes long and gently saline. Rich without being heavy. Proper white Burgundy.
Drink it with: roast chicken with a morel sauce, seared scallops in brown butter, or a wedge of aged Comté.
The Winemaking
Gently pressed and fermented with wild yeasts, first in tank and then finishing (with malolactic) in barrel. Aged for 11 months in 228-litre French oak, then assembled in stainless steel, 16 months in all before release.
The Vineyards
Five plots around Meursault, including Les Pellans and Chaumes des Perrières, with old vines planted between the 1930s and 1970s on limestone-rich soils.
The Producer
Philippe Chavy took over from his father in 2002 with just over 3 hectares and has grown the domaine to around 8, spread over some thirty parcels in Meursault and Puligny-Montrachet. He ploughs, uses no herbicides or insecticides and works by the lunar calendar.
