Tasting Note
Unoaked Burgundian Chardonnay at its most refreshing and easy-going. Light and fruity, with crisp orchard fruit, a touch of citrus and a clean, mineral edge. Nicely balanced between body, acidity and minerality, and very hard to stop at one glass.
Drink it with: it's a lovely aperitif and a natural partner for any fish dish.
The Winemaking
Sorted, destemmed and gently pressed. The juice settles, then ferments cool in stainless steel and rests on its fine lees for six months for a little extra texture. No oak.
The Vineyards
Chalky, limestone-rich soils in the Mâconnais with a humid, often foggy microclimate. The estate farms 35 hectares, 26 of them Chardonnay.
The Producer
Brothers Pierre-Yves and Olivier Fichet run the family domaine, and a new winery has pushed quality up a gear in recent years. Their father Francis was one of the first to plant Pinot Noir in this Chardonnay heartland.
