Tasting Note
Madiran with the edges smoothed off. Tannat has a reputation as a brute, but this one is supple, fruity and generous, with a delicate touch and beautifully integrated tannins. A great introduction to one of France's most characterful red grapes.
Drink it with: red meat in a rich sauce, duck confit, or a plate of charcuterie.
The Winemaking
100% Tannat, destemmed and pressed partway through fermentation to keep extraction gentle. Fermented with wild yeasts in concrete, then aged in tank for 12 months. No oak and no added sulphur during winemaking.
The Vineyards
Tannat vines from 20 years old to pre-phylloxera survivors, on clay-gravel and siliceous soils. Moderate yields, cover crops to protect the soil and Guyot pruning.
The Producer
Simon Capmartin has modernised this traditional Madiran estate. It's certified organic and working towards biodynamic certification, with natural, low-intervention winemaking and wild ferments.
