Tasting Note
Touraine Sauvignon from a young team doing things properly, and it shows. Grapefruit and lime zest, gooseberry, white flowers, cut grass and a flinty edge on the nose. Crisp and zesty, with juicy citrus and a hint of tropical fruit balanced by bright acidity, and a clean, mineral finish. Sancerre-style thrills at a much friendlier price.
Drink it with: Thai or Vietnamese dishes packed with herbs and citrus.
The Winemaking
95% Sauvignon Blanc with a splash of Sauvignon Rose. Fermented with native yeasts in stainless steel, then rested on its lees for texture. Bottled unfined and unfiltered. No oak.
The Vineyards
Around Limeray, near Amboise, on a patchwork of terroirs planted with Chenin, Côt, Sauvignon and Pineau d'Aunis. Farmed organically and biodynamically, with chemical inputs kept to a minimum and biodiversity encouraged.
The Producer
Family-run since 1927, the domaine is now in the hands of the fourth generation: cousins-in-spirit Jean-Baptiste Bonnigal and Stéphane Bodet, who took over together in 2015 after making wine in New Zealand and Bordeaux.
