Tasting Note
Limoux claims to have made sparkling wine before Champagne, and this shows they still know how. Greengage, white flowers and a touch of lemon curd on the nose, then minerality, firm acidity and lively, persistent bubbles. Champagne-method fizz at a much friendlier price.
Drink it with: as an aperitif, or with pan-fried white fish in a creamy sauce.
The Winemaking
70% Chardonnay, 20% Chenin Blanc and 10% of the local Mauzac. Hand-picked and pressed straight away, fermented in stainless steel, then a second fermentation in bottle and at least 30 months on the lees. A dosage made from reserve wine balances it at the end. No oak.
The Vineyards
Older parcels on stony, south-facing hillsides at up to 400 metres, where cool Pyrenean air, Atlantic influence and Mediterranean warmth meet. Terra Vitis certified sustainable.
The Producer
Maison Antech has been making sparkling wine in Limoux for generations. This cuvée is named after Françoise, the sixth generation of the family, who is helping to shape the house's future.
