Tasting Note
Classic dry Alsace Riesling, elegant and quietly confident. Citrus and white flowers on the nose, then a zesty, fruity palate with a lovely mineral backbone. Bone dry, crisp and precise. Exactly what you want from the region's greatest grape.
Drink it with: seafood, fish, poultry, or simple cold dishes and salads.
The Winemaking
Only perfectly healthy, whole grapes reach the winery. The juice is settled naturally, fermented slowly at controlled temperatures for as long as it needs, then aged for six months on its lees. No malolactic fermentation and no oak.
The Vineyards
Organic vineyards in the foothills of the Vosges, hand-harvested parcel by parcel from August to early November. Organic fertilisers and herbal teas of nettle, comfrey and willow replace most copper sprays, and hedgerows, flowers and trees keep the ecosystem in balance.
The Producer
Cave de Ribeauvillé is France's oldest wine co-operative, owned by its growers for more than a century. This organic range is made by winemaker Evelyne Dodelinger, who tastes constantly to bring out each site's character.
