Tasting Note
Amber, with notes of oak. Rounded and full with no alcoholic heat, and none of the usual sherry tang as it's made from PX rather than Palomino. Nutty on the finish, with something of a mellow bourbon about it.
Drink it with: jamón, smoked almonds, blue cheese or rice dishes.
The Winemaking
Single-vintage casks from 2009, 2013, 2015 and 2019 blended in new barrels and aged a further year. First fermented with wild yeasts in French oak, then aged in American oak, some under flor and some not. Never fortified: evaporation takes it from about 15% to 17%.
The Vineyards
Chalky soils between Jerez, Sanlúcar and El Puerto de Santa María, near the Guadalquivir estuary.
The Producer
Bodegas Ximénez-Spínola was founded in 1729 and works only with Pedro Ximénez, making dry wines, dessert wines and sherries from the grape.
