No skin contact, a temperature-controlled fermentation at 18–22°C, then filtered and chilled to keep malolactic out of the picture. No oak.

Sunny, well-exposed Glera sites, picked early in the morning to hold on to acidity, with minimal fertiliser and chemical use.
