Tasting Note
Hazy, peachy pink, with white peach, tangerine and fresh lime. The bubbles are soft and foamy rather than sharp, with juicy peach, nectarine and a watermelon freshness that makes it far too easy to drink. Serve cold and don't shake the bottle.
Drink it with: pizza, picnics and evenings outdoors.
The Winemaking
Malvasia gets a day on its skins for extra perfume, Nero d'Avola a few hours for colour, then everything is co-fermented. Bottled with a little sugar left so it finishes fermenting in bottle over winter, ending fully dry with a gentle 3 bar fizz.
The Vineyards
Cool South Australian vintages with no heat spikes, so the fruit ripens slowly and keeps its freshness and acidity.
The Producer
Wildman Wine is the pét-nat project of Tim Wildman MW: fun, fresh, properly made Australian sparkling wine. Since the first vintage in 2014 the fruit has moved to cooler, better sites in the Adelaide Hills and McLaren Vale, with Nero d'Avola, Zibibbo and other Italian grapes at its heart.
